1.5 oz Gin

0.75 oz Lime Juice

0.25 oz Cassis

0.5 oz Simple Syrup

1 oz Egg Whites

Bar Spoon of Crème de Violette
Method

Add the gin, lime juice, cassis, simple syrup and egg white (if using) into a shaker and vigorously shake with ice for at least 30 seconds.

Remove ice and shake again until well-chilled.

Strain into a coupe glass.

Top delicately with a bar spoon of crème de violette and three Viola flowers.
